Wren & Flour is a corner bakehouse in Altadore. Naturally leavened bread, laminated pastry, coffee from a roaster across the river — all of it built on Alberta-milled flour, most of it gone by noon. Worth setting an alarm for.

Every day at the corner runs on the same quiet schedule — the oven sets it, we keep it. Here's roughly when to show up for what.

It's 7:00 in Altadore — the sourdough is coming out.

Times drift five minutes here or there. The oven is in charge; we just work here.

    The levain's been up all night. Now the rest of us. Lights low, radio lower.

    Country sour and seeded rye out of the oven, crackling as they cool. Doors open.

    Eighty-one layers of butter, give or take. The kouign-amann never make it to ten.

Everything below is mixed, shaped and baked in the room behind the counter — the same morning you buy it. If your heart is set on something, the pre-order shelf never sells out from under you.

Flour & philosophy

Why Alberta flour. Why so slow.

Every loaf here is flour, water, salt, and patience. We buy from Alberta farms, milled a few hours east, because bread should taste like somewhere. Fresh-milled flour keeps what industrial mills sift away — flavour, colour, a little stubbornness. Then we give the dough eighteen quiet hours, because time does what nothing else can. Slow isn't a style. It's the recipe.

Weekend pre-orders

Order Wednesday. Pick up Saturday. Sleep in between.

The weekend list is how regulars guarantee their loaf without setting a 6:45 alarm. We cap it at what the oven can do well — when Saturday's list is full, it's full.

Order by Wednesday, 9 p.m.

Email or call with your loaves and pastries — as much or as little as you like. We'll confirm by Thursday morning with a friendly note and a total.

We bake Friday night, into Saturday dawn.

Your order proofs alongside everything else and comes out of the same oven, the same morning. No special batch — just yours, spoken for.

Pick up Saturday, 8 to noon.

A paper bag with your name on the shelf by the till, still warm if you're early. It smells like a decision well made.

“Sold out” is a feature, not an apology — nothing here sits overnight, and nothing gets sold a day tired.

Wholesale

For restaurants & cafés: a short, serious bread list.

We hold a handful of standing orders — country sour by the dozen, baguettes for service, rye for the sandwich board — delivered before 7 a.m., baked that night. We keep the list small on purpose, so the counter never suffers for it. Two spots open this fall.

Come by the corner.

Look for the wren painted on the window at 20th Street and 38th Avenue SW. If the door's propped open, the bread's still warm. If we've flipped the sign early — that's a good problem, and we're sorry, and also a little proud.
